The Indian kitchen has traditionally been much more than a collection of recipes. It is a space where food, flavour, seasonality, digestion and everyday wisdom come together. We grew up seeing spices added almost instinctively — ajwain after a heavy meal, ginger with changing seasons, cumin in everyday cooking, turmeric appearing in food and home remedies alike. Much of this knowledge travelled through families, not textbooks.
The Great Indian Kitchen brings us back to that everyday wisdom, helping us understand the spices we have always used — their taste, aroma, combinations, culinary role and their relationship with digestion, season and balance.
The program begins with the familiar masala dabba (box) and explores what makes the Indian kitchen unique.
